This publication examines issues of food quality and safety, the most common contaminants and types of adulteration, both in the Republic of Kazakhstan and abroad, as well as methods for their detection reflected in recent years in publications indexed in the international databases Web of Science, ScienceDirect, Elsevier, SpringerLink, eLIBRARY.RU, and others. The monograph also presents new rapid methods developed by the authors for monitoring the quality and safety of livestock products – meat, milk, meat and dairy products, fish, and honey – applicable in veterinary and sanitary expertise.
The main part of the monograph was prepared based on the results of research carried out within Project 5591/GF4, “Development of Methods and Test Kits for Determining Contaminants in Food Products and Food Adulteration,” under Budget Program 217, “Science Development,” implemented in 2015-2017. Some earlier results obtained during projects carried out in 2009-2014 were also included, as well as results from Project AR05131273, “Assessment of the Bioproductivity of Inland Water Bodies in Northern and Central Kazakhstan with Determination of the Food Safety of Fish Products,” 2018-2020.
The publication also reflects the results of the development of analytical methods carried out within the program-targeted funding of scientific research and activities under Project BR10764944, “Development of Methods for Analytical Control and Monitoring of Food Product Safety,” for 2021-2023, within the topic: “Environmental Monitoring of the Safety and Quality of Fish from Water Bodies of Central and Northern Kazakhstan with the Development of Analytical Methods for Veterinary and Sanitary Assessment.”
The edition includes results obtained during the implementation of Project AP23484620, “Development and Implementation of Phytogenics and Phytobiotics for the Prevention and Treatment of Mastitis in Animals with Assessment of Milk Quality and Safety.”
The monograph is available in the library of S. Seifullin Kazakh Agrotechnical University, Astana.
