Abstract. The issue of microbial resistance to antibiotics is still acute and requires an urgent solution. Residual amounts of antibiotics in animal-derived foodstuffs can adversely affect human health directly causing diseases
as a result of exposure to low doses and/or indirectly causing harm. Analysis of the data published reveals that there are cases of detection of residual amounts of antimicrobial substances in animal products, and to a greater
extent in poultry products. The review presented is focused on phytobiotics as an alternative to antimicrobials which can increase meat and egg productivity in quails, simultaneously improving the sensory characteristics of
quail products and their biosafety.
